Zucchini Fritters

Ingredients
One large zucchini (grated)
Two small carrots (grated)
Tin of corn
3 eggs
1 TBS Turmeric
1 TBS Cumin
⅛ cup GF flour (or regular flour)
Pepper
Instructions
Combine all ingredients in a bowl
Divide into desired sizes
Cook in a fry pan
Notes
Made approx. 12 fritters. Plain simple.
These are NIGHTSHIFT snacks.I get bored with food so I need to make something exciting to stop the overnight ‘naughtiness’. If I had sour cream I would eat them with that or even a side of sweet chilli sauce.
Good side dish for meats too!
